Oatmeal Cinnamon Craisin Cookies image

I was asked to make some Oatmeal Chocolate Chip Cookies so I did. I had so much batter that I split it. I decided to not add Chocolate Chips to that seprated batter and added cinnamon and said what the heck, let's try Craisens. I did and I'm hooked. This is a beautifully soft and delicious cookie that even Santa would approve!!!

1/2 cup(s) salted butter
1/2 cup(s) dark brown sugar
1/2 cup(s) granulated sugar
2 - eggs
1 1/2 teaspoon(s) pure vanilla extract
1 1/2 cup(s) all purpose flour
1 tablespoon(s) ground cinnamon
1/2 teaspoon(s) baking soda
1 cup(s) oatmeal (not quick cooking)
1 1/2 cup(s) dried cranberries (such as ocean spray)

Steps:

  • Preheat oven at 350 degrees.
  • Melt butter on very low heat.
  • Sift flour, Cinnamon and Baking soda together. Set aside.
  • In mixing bowl, beat sugars, vanilla, butter and eggs together.
  • Slowly add your flour and oatmeal mixture to the sugar blend while blending at a medium setting. Add Craisens until well distributed in the batter.
  • Using two large soup spoons, spoon batter onto baking pan lined with parchement paper or sprayed with baking spray. You should have 16 large cookies or use smaller spoons for more cookies. Bake for 10-12 mins.
