1/2 cup butter
1/2 cup brown sugar
1 egg
1 cup quick-cooking oatmeal
1 cup buttermilk
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon (optional)

Steps:

  • cream butter and sugar.
  • add egg.
  • add oatmeal.
  • add buttermilk.
  • then add flour.
  • salt baking powder and baking soda.
  • mix well.
  • bake in greased muffin tin 350 for 20 to 25 minutes.
