OATMEAL ALMOND COOKIES image

1 c rolled oats
1/4 c slivered almonds
1 c all purpose flour
1/2 t baking soda
1/4 t baking powder
pinch salt
1/2 c butter, room temperature, diced
1/2 c sugar
1/2 c light brown sugar
1 egg
1/2 t vanilla extract
1 c semisweet chocolate chips
1/4 currants/raisins

Steps:

  • Preheat oven to 350F In a mixing bowl, combine flour, baking soda, baking powder and salt. Set aside. In a separate bowl, cream butter an sugars together using an electric mixer. Add the egg and vanilla and beat until fluffy. Add the flour mixture and beat until mixed well. Stir in rolled oats, chips, almonds and currants. Drop by teaspoonfuls on parchment line baking sheets. Bake for 12 minutes or until firm around the edges. Let cool on wire racks.
