NORTH STAFFORDSHIRE OATCAKES image

Yield 24 Oatcakes

Number Of Ingredients 7

16 OZ fine oatmeal
16 oz whole wheat or plain flour
2 tsp salt
1 oz fresh yeast
1.5 pints warm milk
1.5 pints water
2 tsp sugar

Steps:

  • 1.) mix warm milk and water together. set aside 2) Add salt to flour and oatmeal. 3) Dissolve yeast with a little of the warm liquid and add sugar. Allow to cfrothy 4) Mic dry ingredients with yeast and the rest of warm liquid to make a batter 5) Cover with a clean cloth and leave in warm place for 1 hour bake on well greased griddle. Put enough batter onto the griddle to produce an oatcake about 8-9 inches in diameter. The surface will be covered in holes as it cooks.Turn oatcake after 2-3 minutes when upper sides appear dry and underside in golden brown and cook another 2-3 minutes
