NORTH AFRICAN CHICKEN image

Yield 4 bowls

Number Of Ingredients 12

2 tbsp oil
1 tsp cayenne
5 green onions cut into lengths, 2 sliced
1 tsp ground corriander
s and p
juice of 1 lemon
4 boneless chicken breast
3 cloves of garlic chopped
3 slices of ginger chopped
1 cup chopped peanuts
1 can chicken stock
handful of fresh corriander

Steps:

  • Heat oil, fry chicken and cayenne. Add garlic, onion, ginger and peanuts. Sprinkle with corriander and salt and pepper. Pour in stock and lemon juice. Cover 3 mins, serve with sliced green onion garnish and fresh corriander
