No-Cook Cashew Alfredo image

This is an amazing recipe when it's the middle of summer and you don't feel like working in the kitchen. Light and refreshing, yet quick and easy! Serve over zucchini noodles or regular noodles.

2 cups cashews
1 ½ cups water
½ cup pine nuts
¼ cup nutritional yeast
3 cloves garlic
1 tablespoon lemon juice
1 teaspoon sea salt
1 teaspoon dried thyme
ground black pepper to taste
