No-Bake Buko Pie image

No-bake buko pie with graham crust.

1 cup unsalted butter
1 ½ cups crushed graham crackers
½ cup rolled oats
3 tablespoons white sugar
½ cup coconut water
½ cup evaporated milk
½ cup white sugar
⅓ cup cornstarch
2 cups fresh young coconut flesh

Steps:

  • Melt butter in a saucepan over low heat; add crushed graham crackers, oats, and sugar. Cook for 3 minutes. Press half of the mixture evenly in a 9-inch pie dish. Refrigerate for 30 minutes.
  • Mix coconut water and evaporated milk together in a bowl.
  • Mix sugar and cornstarch together in a saucepan. Add coconut meat and cook over medium heat until mixture thickens, about 20 minutes. Spread coconut mixture over refrigerated crust. Top with remaining graham cracker mixture.
  • Chill for at least 1 hour before serving.
