Steps:
- Melt butter in a saucepan over low heat; add crushed graham crackers, oats, and sugar. Cook for 3 minutes. Press half of the mixture evenly in a 9-inch pie dish. Refrigerate for 30 minutes.
- Mix coconut water and evaporated milk together in a bowl.
- Mix sugar and cornstarch together in a saucepan. Add coconut meat and cook over medium heat until mixture thickens, about 20 minutes. Spread coconut mixture over refrigerated crust. Top with remaining graham cracker mixture.
- Chill for at least 1 hour before serving.
