Nistisimo Cake (During Lent or whenever you like!! image

This cake is really easy. I made it for Oxi Day - Mar 25th for my mother is law who is fasting for Lent, but you'll enjoy this anytime. Didn't have any cognac so I just used extra orange juice. The glace ingredients are actually doubled because I want plenty!! Enjoy !

1/2 cup(s) vegetable oil
1 cup(s) sugar
3/4 cup(s) orange juice, fresh
1 tablespoon(s) grated orange rind
1/4 cup(s) cognac
3 cup(s) self rising flour
1/2 cup(s) raisins
1/2 cup(s) chopped walnuts
1 teaspoon(s) baking soda
11/2 teaspoon(s) ground cinnamon
1 teaspoon(s) ground cloves
GLACE
2 cup(s) caster sugar
2 teaspoon(s) grated orange rind
2 tablespoon(s) fresh orange juice

Steps:

  • Pre-heat oven 180 degrees. Beat sugar and oil. Add orange rind, orange juice and cognac.
  • In a seperate bowl mix flour, cinnamon, baking soda and cloves. Add to oil mixture. Beat on medium speed, mixture will be thick. Fold in walnuts and raisins.
  • Bake in a well greased/floured cake tin for 45-5o minutes depending on your oven. Test for doneness with toothpick.
  • While the cake is baking make the glace. Beat caster sugar, orange rind and orange juice. Remove cake and let cool slightly. While still warm pour icing all over. When it cools completely it will form a sweet crust.
