NEW YORK CHEESECAKE (NEW JOY OF COOKING) image

1 1/2 c oreo crumbs
6T melted butter
--- or ---
1 1/2 c graham crumbs
1/4 c sugar
6T melted butter
2 1/2 lb cream cheese (4 1/2 x 250mL)
1 3/4 c sugar
1/2 t vanilla
5 lg eggs
2 lg egg yolks
1/2 c heavy cream

Steps:

  • Grease large springform pan. Preaht oven to 500F. Beat cheese until creamy (30s), scraping sides. Gradually add and beat sugar. Beat in vanilla. Add eggs, 1 at a time, beating in and scraping sides. On low speed, beat in cream. Scrape sides and add to pan, smoothing top. Place pan in water bath. Bake 15 min at 500F, reduce to 200F and bake 1h. Cool in oven 30 min. Cool in pan completely before unmolding. Cover and refrigerate 6h minimum (24h best).
