MUSTARD AND CHILI RUBBED BEEF TENDERLION image

2-lb tenderloin
3 TBS estra virgin olive oil
1TBS Dijon mustard
1 tsp chili powder
1 tsp chilpolte chili powder
1/2 tsp ground cumin
1/2 tsp ground pepper
1 lg clove garlic passed through press
kosher salt to taste

Steps:

  • heatwhisk 1 TBS oil and other ingedients. In a large skillet heat remaining 2 TBS of oil. season beef with salt. Sear the meat until froms brown crust. Transfer to baking dish brush with mustard-chili rub. Roast at 450 until registers 115 for rare and 120 for medium rare regriferate for at leasst 2 hours before slicing.
