MUSHROOM AND GOAT CHEESE CROSTINI image

Number Of Ingredients 7

24 oz baby bellas( shitake& cremini)
5 oz goat ch from log(about 1/2 of log Costco)NOT at rm temp
4 garlic cloves minced
5-6 tbsp butter
1/2 c fat free 1/2 & 1/2 (use Land O Lakes)
s & p to taste
chp fresh parsley

Steps:

  • 1. Process mush-stem & cap seperately--not too fine 2. melt butter in skillet over med-hi heat-add mushrooms& garlic 3.saute till mushrooms are ckd through and no liquid in pan (about 10 min) 4. add 1/2&1/2--boil down until liquid is completely absorbed--remove from heat 5. stir in goat cheese till melted-s&p to taste 6. freeze if not needed--defrost -put in white sm casserole lightly sprayed w/ Pam 7. bake uncovered till top is slightly brn & bubbly--cover if getting too brn--serve w/ crostini if filling filo shells heat about 6 min till top is ckd thru -then sprinkle w/ chp parsley
