MOROCCAN CHICKPEA CHILI image

Number Of Ingredients 19

2 teaspoons olive oil
1cup chopped onion
3/4 cup chopped celery
1/2 cup chopped carrot
1 teaspoon minced garlic
2 teaspoon ground cumin
2 teaspoon paprika
1 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
1 1/2 cups water
2 tablespoons tomato paste
2 15 1/2 ounce cans chickpeas, rinsed and drained
1 14 1/2 ounce can diced tomatoes, untrained
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lemon juice

Steps:

  • Heat oil in pan and sauté onion, celery, carrots and garlic for 5 minutes. Stir in spices and sauté 1 more minute, stirring constantly. Add water, tomato paste, beans and tomatoes. Bring to a boil, then reduce heat and simmer 20 minutes. Stir in cilantro and lemon juice. Enjoy!
