This is a casserole my mom made when we were growing up. I don't have any idea where she got the recipe, I just know it was the one thing I would always ask her to make for me. I still make it but as empty nesters I cut the recipe in half. The onions give it a unique flavor. It is so easy to make and just a few ingredients are needed. Hope you will try it and enjoy.

Steps:
- Pre-heat oven to 350 degrees. Spray or grease a large deep baking dish.
- Combine tomato juice, water, ketchup, salt, and pepper. Stir gently just to combine the ingredients. Pour into the prepared dish.
- Make the ground beef into meatballs the size of a walnut. Add the uncooked meatballs, onions and uncooked rice to the tomato juice mixture in the baking dish. Cover with foil and bake 2 to 2-1/2 hours or until rice is tender at 350 degrees. Gently stir once or twice during baking, being careful not to break up the meatballs.
- Be careful when stirring not to burn yourself.
