Mom's Banana Nut Bread image

This is an old recipe from the 60's and I always get rave reviews from it. Recipe can be doubled. Can also be made into muffins.

Number Of Ingredients 11

1 cup(s) all purpose flour
3/4 cup(s) graham cracker crumbs
2 teaspoon(s) baking powder
1/4 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/3 cup(s) shortening
2/3 cup(s) sugar
2 - eggs
3 - ripe bananas
1 cup(s) walnuts
12 ounce(s) chocolate chips

Steps:

  • combine 1st 5 ingredients and set aside. mix sugar and shortening well then add eggs and mix well.
  • mash ripe bananas on a separate plate. Add 1/2 of bananas to sugar mixture and mix. then add 1/2 of flour mixture and mix. then repeat with remainder. do not overmix. Add walnuts and chocolate chips and stir in.
  • Use a bread loaf pan greased and floured. Bake 350, 55 minutes. test with a toothpick.
  • I like to double this recipe and make 1 loaf and 12 muffins. for muffins grease and flour 12 cupcake pan and bake 350, 25 minutes.
