MOCHA CREAM image

Yield 8 servings.

Number Of Ingredients 7

3 3/4 cups cream
1/2 cup sugar
1/2 chestnut puree (Paul used an entire can so it's possible it could be somewhat more
1/4 pound dark sweet chocolate
2 tbsp dry instant coffee
2 tbsp water
2 tbsp rum

Steps:

  • Heat water, add coffee, dissolve and let cool. Whip the cream, adding sugar while whipping. When stiff, remove 1/6 of the cream for garnish. Grate the chocolate and add to the remaining whipped cream with the chestnut puree. Blend thoroughly. Add rum to coffee, and fold carefully into the cream mixture. Place in a large shallow dish.
