Mimosa Fruit Salad image

Delight brunch guests with Mimosa Fruit Salad. Reminiscent of the classic drink, refreshing mimosa fruit salad features mandarins and sliced strawberries.

3 cups boiling water
2 pkg. (0.6 oz. each) JELL-O Orange Flavor Sugar Free Gelatin
1 qt. (4 cups) cold club soda
1 can (11 oz.) mandarin oranges, drained
2 cups sliced strawberries

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened.
  • Stir fruit into gelatin; pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold.
