Microwave Peanut Brittle image

I had never made Peanut Brittle before I tried this recipe and was shocked how easy it is to make using my micro. Note : If you can't find raw peanuts , you can use the roasted salted ones too and it comes out just as good.

Number Of Ingredients 8

2 cup(s) sugar
1 cup(s) corn syrup, light
1/2 cup(s) water
2 cup(s) raw shelled peanuts ; unsalted
2 tablespoon(s) vanilla extract
2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2 tablespoon(s) butter, room temperature

Steps:

  • Combine : sugar , corn syrup and water in a 2 QT. Glass measuring cup ; cook uncovered in micro-wave for 7 minutes on Power Level 10.
  • Stir peanuts and the butter into the mixture . Cook uncovered for 16-17 minutes on power level 10. OR until mixture forms like threads when dropped into cold water Or when candy thermometer reaches 300 deg. Stir 4-5 times during cooking process.
  • Add the remaining ingredients ; blend until smooth.
  • Pour mixture onto parchment paper or into buttered baking sheets. Spread into a thin layer with a knife.
  • Let stand until hard ; about 1/2 hour. Break up into pieces . Store in air tight container.
