MEYER LEMON CONFIT image

Yield ½ cup

Number Of Ingredients 3

2 cups water
½ cup sugar
5 ¼-inch-thick rounds Meyer lemon or regular lemon with peel, diced

Steps:

  • Stir 2 cups water and sugar in small saucepan over high heat until sugar dissolves. Add diced lemon; bring to boil. Reduce heat to medium-low. Simmer until syrup is thick and mixture is reduced to about ½ cup, about 40 minutes. Transfer to bowl; cool. DO AHEAD: Can be made 4 days ahead. Cover and refrigerate.
