Mexican Egg Avocado & Tomato Salad Sammie image

This is a delicious egg salad with a mexican twist. It's quick easy and packed with flavor. Great for a snack or a light meal. Cooking with Passion, sw :)

Number Of Ingredients 14

5 large eggs, hard boiled
1 large haas avocado, diced
1 large roma tomato, deseeded & diced
1/2 small red onion, chopped
1 1/2 Tbsp cilantro, chopped
2 oz spring salad mix
4 wheat rolls
DRESSING
1/2 c cup mayonnaise-more if needed
juice and zest of 1 lime
1/2 tsp cumin
1/2 tsp chipotle chili powder
2 pinch oregano
salt and pepper to taste

Steps:

  • 1. Add dressing ingredients to a mixing bowl and whisk.
  • 2. Add ingredients 1-5 to a large mixing bowl and fold in dressing.
  • 3. Place spring salad mix on bottom half of rolls followed by egg salad and top of rolls.
