* Mexican Cornbread image

I can not claim this recipe... it is my husbands. He taught me how to make it. I will get a picture later this week.

Number Of Ingredients 10

2 package(s) jffy cornbread
1 1/2 pound(s) ground beef
1 medium chopped onion
1 medium chopped bell pepper
1 pound(s) velveta cheese cubed
1 - can creamed corn
1 - jalapeno pepper chopped
1 teaspoon(s) oregano, dried
1 teaspoon(s) garlic powder
1 teaspoon(s) chili powder

Steps:

  • cook meat spices, onion and peppers together until meat is brown. drain meat well.
  • In a bowl put 2 pkg of cornbread and creamed corn.
  • Pour 1/2 the batter in a cake pan. Top with meat then top the meat with small cubes of the velveta. The more cheese the better :)
  • Cover the dish with the remaining batter.
  • cook uncovered in the oven at 375 degrees for 40 minutes or until the bread is slightly browned on top.
