MEXICAN CHOCOLATE COOKIES image

Number Of Ingredients 11

5 oz (60% cocoa) bittersweet chocolate, coarsely chopped
3.4 oz all purpose flour (about 3/4 c)
1/2 t ground cinnamon
1/4 t baking powder
1/4 t salt
dash black pepper
dash ground red pepper
1 1/4 c sugar
1/4 c butter, softened
1 large egg
1 t vanilla

Steps:

  • Preheat oven to 350 Place chocolate in small glass bowl; microwave high 1 minute or until almost meleted., stirring smooth. Cool to room temperature. Weigh or lightly spoon flour into dry measuring cup; level with a knife. Combine flour with cinnamon, baking powder, salt and peppers; stir well Combine sugar and butter with mixer until blended. Add egg; beat well. Add vanilla and cooled chocolate; beat until just blended. Add flour mixture; beat until just blended. Drop by tablespoonful onto parchment paper lined cooking sheet. Bake 10 mins. Cool on pan 2 mins until set. Remove from pan and cool completely on wire rack. Sprinkle w/ confectioners sugar
