Mexican Baked Potato image

A great easy and tasty way to use leftovers.

Number Of Ingredients 6

leftover or fresh baked potato(es)
lean taco meat
canned or homemade enchilada sauce
2% cheddar cheese, shredded
red onion chopped, or pico de gallo
light sour cream

Steps:

  • 1. Slice, dice, cube or smash baked potato on plate, top with taco meat, cheese, diced onion, and drizzle on enchilada sauce. Pop into micro for 2-3 min. Garnish with sour cream. Other good garnishes would be diced tomatoes, pico de gallo, salsa verde, red salsa.
