Memphis BBQ Sauce image

This BBQ sauce is super easy and totally awesome! You can use it immediately but it does get better when it sits. This sauce is gooey, spicy and sweet. If you do not like hot/spicy foods simply adjust or omit the pepper sauce and pepper flakes. I add some pan drippings/marinade that I strained and removed the fat but the sauce is still delicious with out it.

6 cups ketchup
1 1/2 cups packed brown sugar
3/4 cup apple cider vinegar
1 1/2 cups yellow mustard
1 -3 teaspoon crushed red pepper flakes (optional and or or to taste)
3 tablespoons onion powder
3 tablespoons garlic powder
3 tablespoons powdered pico de gallo (or chile powder)
1 teaspoon Tabasco sauce (optional and or or to taste)
3 tablespoons black pepper
1 1/2 teaspoons celery salt
3 tablespoons liquid smoke
9 tablespoons Worcestershire sauce
1/2 cup of strained and de-fatted drippings (optional) or 1/2 cup marinade, from the roasting pan* (optional)

Steps:

  • Add all ingredients and simmer over medium low heat for 20 minutes stirring occasionally until smooth and hot.
