MEDITERRANEAN SHRIMP PIZZA image

Yield 3-4 servings

Number Of Ingredients 8

1/2 pound raw, peeled and deveined medium shrimp (31-35 per pound)
2 8-inch prebaked thin pizza crusts (frozen)
1/2 cup pesto
2 tablespoons nonfat yogurt
1/2 cup pitted kalamata olives, sliced
3/4 cup thinly sliced roasted red bell peppers
2 ounces feta cheese, crumbled
Optional toppers: balsamic vinegar, extra virgin olive oil, and fresh basil, cut into thin strips.

Steps:

  • Preheat oven to 450 degrees. Either saute shrimp in a bit of olive oil, or boil for 2 minutes, until pink. Place pizza crusts on baking sheet. Combine pesto and yogurt and spread on crusts, leaving a 1-inch rim. Top pesto with olives, roasted red peppers, shrimp and feta cheese. Bake for 7-8 minutes or until cheese is softened and crust is crisp. Before serving, add optional toppers, if desired.
