Mediterranean Shrimp and Bulgur image

Keep this tasty 20-minute recipe on hand for a quick and healthy weekday option. It's full of fiber and protein, thanks to a combination of cracked wheat and shrimp tossed with baby arugula and mint.

Number Of Ingredients 11

3/4 c. bulgur (cracked wheat)
1/2 lg. seedless cucumber
3 scallions
1/2 c. mint leaves
1 lb. frozen cooked large shrimp
1 pt. grape tomatoes
1/4 c. lemon juice
2 T. olive oil
1/4 t. each salt and pepper
3 c. baby arugula
2 oz. feta cheese crumbled

Steps:

  • Put bulgur in large bowl. Add boiling water to cover; let soak 15 minutes.
  • Meanwhile, coarsely chop cucumber, scallions and mint leaves.
  • Drain bulgur well, return to bowl and add shrimp, tomatoes, cucumber, scallions, mint, lemon juice, olive oil, salt and pepper. Toss with arugula. Sprinkle with the feta.
