MEDITERRANEAN KABOBS image

Number Of Ingredients 6

15 Spinach tortellini, cooked
1/4 c Italian vinegrette dressing
1/2 Red pepper, medium, cut into 3/4-inch pieces
1/4 lb. Italian mozzarella, 1/2-inch thick, cubed
16 oz. Artichoke hearts, marinated, chopped
15 Extra large olives, pitted

Steps:

  • Place tortellini peppers, cheese, artichokes, and olives in a plastic bag. Pour dressing in and roll bag so all ingredients are covered. Marinate 2 hours or overnight. Place one of each ingredient on a kabob. Serve cold.
