MEDITERRANEAN FLATBREAD PIZZA image

Yield Makes 2 individual pizzas.

Number Of Ingredients 15

2 whole wheat flatbreads
2 tablespoons pepper infused olive oil plus more
for drizzling when serving
1/4 cup shredded mozzarella
1/4 cup shredded asiago
1/4 cup shredded pecorino
1/4 cup shredded parmesan plus more to
sprinkle when serving
2 roma tomatoes, thinly sliced
6 kalamata olives, sliced
1 roasted red bell pepper, sliced
16 marinated artichoke quarters, drained
1 teaspoon dried oregano
Salt and pepper
2 tablespoons fresh basil, cut into ribbons

Steps:

  • Preheat oven to 400 degrees. Drizzle the pepper infused olive oil over the flatbreads and bake at the top of the oven on a baking sheet for 4 minutes. Meanwhile combine the four cheeses in a bowl. Remove flatbreads from oven and place half of the cheese combination on each. Make sure that it is evenely distibuted over the flatbreads. Place the tomato slices over the cheese then sprinkle on the olives, bell pepper and artichokes. Top with 1/2 teaspoon dried oregano on each pizza as well as salt and pepper to taste. Return pizzas to oven and bake for 8 minutes. Remove baking sheet from oven. Top each pizza with half of the basil ribbons. Slice and serve with extra pepper infused oil and parmesan.
