MEDITERRANEAN COUSCOUS SALAD image

Number Of Ingredients 10

olive oil
2 cloves garlic, minced
16 oz. Israeli couscous
3 cups chicken broth
2 lemons, juiced
1 lemon, zested
1 cup chopped basil leaves
1/2 cup chopped mint leaves
1/2 cup craisins
1/2 cup slivered almonds

Steps:

  • In medium saucepan warm oil and add garlic. Cook for 1 minute. Add couscous and cook until toasted, about 5 minutes. Carefully add the stock and juice of 1 lemon and bring to a boil. Reduce heat and simmer, covered, about 8-10 minutes. In large bowl toss the cooked couscous with olive oil, remaining lemon juice, zest, salt and pepper. Add fresh herbs, craisins and almonds.
