Meaty Mac & Cheese Bake image

Shoestring chef! Create this delicious meal without busting your budget. I found this recipe in Woman's World. I made this for my families dinner. It was quick & easy. When I made this I used shelf stable milk with no problems. I added more cheese for the top. This was a bit bland for my family so next time I think I'll use a homemade sloppy joe mix and add some flavor to the mac & cheese.

Yield 8 serving(s)

Number Of Ingredients 6

1 lb ground beef
15 1/2 ounces sloppy joe sandwich sauce
14 1/2 ounces macaroni & cheese dinner mix
3/4 cup milk
3 eggs
1 1/2 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350.
  • Coat 2-quart baking dish with cooking spray. In nonstick skillet over medium-high heat, cook beef until no longer pink, 3-5 minutes; spoon off fat. Stir in sloppy joe sauce; cook 5 minutes. Remove from heat. Meanwhile, cook macaroni according to package directions, reserving sauce packets; drain. In bowl, whisk sauce packets with milk and eggs until smooth; stir in pasta and 1 cup cheese. Spread half of macaroni mixture in dish; top with Sloppy Joe mixture, then remaining macaroni. Cover; bake until bubbly, 30 minutes. Uncover; sprinkle with remaining cheese. Bake 5 minutes. Garnish with chopped fresh parsley, if desired.
