Meatloaf with Garlic Sauce image

MEATLOAF
2 tablespoon(s) olive oil
1 large onion small dice
2 stalk(s) celery small dice
4 clove(s) garlic minced
1 1/2 pound(s) ground beef
1 1/2 pound(s) ground pork
2 tablespoon(s) each fresh parsley and chives chopped
1 teaspoon(s) ground thyme
3 large eggs beaten
1 cup(s) milk
2 1/2 cup(s) panko bread crumbs
1 tablespoon(s) salt
1 teaspoon(s) black pepper
GARLIC SAUCE
10 clove(s) garlic whole
3/4 cup(s) olive oil
2 cup(s) chicken stock
4 tablespoon(s) butter
- salt and pepper to taste

Steps:

  • Preheat oven 350 degrees. Place olive oil in a saucepan and saute onions, celery and garlic until softened. Remove from heat and let cool a bit. Mix milk and Panko bread crumbs together in a large bowl.
  • Add all the ingredients for the meatloaf together and mix well with your hands. Line a large baking sheet with parchment paper and shape a large loaf of meatloaf. Bake for 45 minutes to an hour depending on how thick the meatloaf is.
  • Meanwhile make the garlic sauce. Combine oil and garlic in a small pan. Bring to a boil then lower the temp to lowest setting and simmer for 15 minutes. Don't burn the garlic. Remove the garlic cloves and reserve the oil for other uses.
  • Add chicken stock and butter to a sauce pan. Add the cloves of garlic and bring to a boil over high heat. Lower heat to low medium and with an immersion blender blend the garlic cloves until smooth.
  • Simmer 35 to 40 minutes to thicken the sauce. Season with salt and pepper. Serve drizzled over meatloaf and garnish with parsley if desired
