What could be better than coconut, pineapple, brown sugar and macadamia nuts?

Steps:
- Combine oats and buttermilk in a bowl. In a separate bowl combine flour, salt, baking soda and powder. Blend with a metal whisk.
- Stir the melted butter, brown sugar, egg, coconut, pineapple and nuts together. Stir into the oat mixture. Add the dry ingredients and stir until moistened.
- Spoon batter into greased muffin cups. In a separate bowl combine topping ingredients and mix until crumbly. Sprinkle over the muffins.
- Bake for 20 minutes at 400 degrees. Let the muffins sit for a few minutes before removing onto rack. Serve muffins while still warm.
