Maui Muffins image

What could be better than coconut, pineapple, brown sugar and macadamia nuts?

1 cup(s) rolled oats, regular or quick
1 cup(s) buttermilk
1 cup(s) all-purpose flour
1/4 teaspoon(s) salt
1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) baking powder
1/2 cup(s) melted butter or margarine
1/2 cup(s) brown sugar, not packed
1 - egg
3/4 cup(s) shredded coconut
1/4 cup(s) crushed pineapple, drained
1/3 cup(s) chopped macadamia nuts
BROWN SUGAR TOPPING:
1/4 cup(s) all-purpose flour
2 tablespoon(s) rolled oats
1/4 cup(s) brown sugar
3 tablespoon(s) butter or margarine
1/4 teaspoon(s) cinnamon, optional

Steps:

  • Combine oats and buttermilk in a bowl. In a separate bowl combine flour, salt, baking soda and powder. Blend with a metal whisk.
  • Stir the melted butter, brown sugar, egg, coconut, pineapple and nuts together. Stir into the oat mixture. Add the dry ingredients and stir until moistened.
  • Spoon batter into greased muffin cups. In a separate bowl combine topping ingredients and mix until crumbly. Sprinkle over the muffins.
  • Bake for 20 minutes at 400 degrees. Let the muffins sit for a few minutes before removing onto rack. Serve muffins while still warm.
