MASHED BEANS AND BROCCOLI RABE image

1½ Tablespoons olive oil
2 cloves garlic, minced
2 teaspoons chopped rosemary
1 bunch broccoli rabe, chopped
2 (15 ounce) cans white beans, drained and rinsed
¼ cup gluten free low-sodium chicken broth

Steps:

  • 1. Heat a large skillet over medium heat and add oil, garlic, and rosemary; sauté for 1 minute. 2. Add broccoli rabe and cook until slightly tender, about 5 minutes. 3. Add in beans and broth and cook 2 minutes. Mash with potato masher or fork until chunky.
