Mary's Gazpacho image

Number Of Ingredients 16

2 large cans can tomato or vegetable juice
6 slices dark rye or pumpernickel bread
2 shredded carrots
1 diced green pepper
1 diced red pepper
1 diced cucumber
1.5 cups shredded cabbage
2 cans 14 oz low sodium or fresh tomatoes
1/2 diced onion
2 tablespoon olive oil
3 cloves minced garlic
2 teaspoons marjoram
2 teaspoons basil
1 tablespoon tabasco
1 pinch salt
1 pinch pepper

Steps:

  • soak and mash bread in tomato juice
  • combine all other ingredients
  • serve chilled with choice of toppings: sour cream, shrimp, croutons, chopped spinach or kale
