This is great tasting healthy meal for a meatless Monday dinner

Steps:
- 1. Heat the oil in a large (8-quart) pot over medium high. Add the onions and cook, stirring,until slightly softened, 4-5 minutes. Add the carrot, celery & garlic and cook stirring occasionally, until slightly softened approximately 4minutes.
- 2. Add the green beans, kale (or Savoy cabbage) and potatoes, tossing often until the kale is wilted& brightly colored,about 5 minutes.
- 3. Pour in broth and the tomatoes, cover and simmer 1 hour.
- 4. Makes 8 servings.
- 5. You can add 1cup orzo or another small pasta. After it has simmered you can add 2 or 3 cans do cannelini or red kidney beans
