Marmalade-Nut Bread image

This recipe was a mystery to me. I handwrote it on notebook paper, many years ago. It was in with many more recipes in my closet. I have no clue, where it came from. And, I have never made it, but it sounds yummy! I'd say, I need to make it soon!

Number Of Ingredients 9

- cooking spray
2 1/2 cup(s) unsifted flour, stirred, before measuring
1/3 cup(s) sugar
3 1/2 teaspoon(s) baking powder
1 teaspoon(s) salt
1 cup(s) coarsely chopped walnuts
1 large egg
1 cup(s) sweet orange marmalade
1 tablespoon(s) vegetable oil

Steps:

  • Preheat oven to 350°F. Spray 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2 inches) with cooking spray.
  • In a large mixing bowl, thoroughly stir together flour, sugar, baking powder, and salt. Add walnuts; toss to coat evenly.
  • In a medium bowl, beat egg slightly; stir in marmalade, orange juice, and vegetable oil. Add flour mixture to egg mixture. Stir only, until dry ingredients are moistened. Divide batter, evenly, between the 2 prepared loaf pans.
  • Bake loaves 1 hour, or until tests clean with wooden pick, inserted in centers. Cool in pans on rack for 10 minutes; remove from pans; cool thoroughly on rack. Wrap loaves tightly in foil. Allow flavors to mellow overnight, before serving.
