1 cup packed brown sugar
1/2 cup canola oil
3 bananas, well mashed
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup chopped pecans, slighly toasted

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a loaf pan.
  • In a medium bowl, mix all the wet ingredients until the sugar is dissolved.
  • In a big bowl, sift all the dry ingredients together.
  • Add the liquid mix to the sifted dry ingredients. Mix well and fold in the chopped pecans.
  • Pour in the loaf pan and bake for 1 hour.
