MAPLE SUGARED PECAN PIE WITH BRANDIED CREAM image

1 refrigerated 9 inch pie crust
2 large eggs
1/4 cup melted butter
1/4 cup maple syrup
1/2 cup granulated light brown sugar
2 tablespoons brandy
2 cups chopped pecans
1 cup heavy cream
3 tablespoons granulated light brown sugar
2 tablespoons brandy
1/2 teaspoon vanilla extract

Steps:

  • 1. Preaheat oven to 350 degrees F. Spray a 9 inch glass pie pan with cooking spray. Place pie crust in pan and trim excess from rim. Take a fork and press lightly on rim of crust continuing in a circle around pan. 2.In a medium sized bowl combine eggs, butter, maple syrup, brown sugar and brandy. Mix until ingredients are well blended. Stir in pecans. Pour mixture into pie pan spreading evenly. Bake at 350 degrees F for 40- 50 minutes until pie is set. If after 15- 20 minutes pie is browning quickly,cover crust with foil. Remove from oven and allow to cool. Pie can be served warm or cool. 3. In a small bowl combine heavy cream, brown sugar, brandy and vanilla extract. Beat with mixer on high speed until cream is whipped and forms soft peaks. Refrigerate until ready to use. When pie is ready to be served, spoon cream topping on pie and sprinkle with cinnamon if desired.
