Maple Butternut Squash image

I like the winter squash, you can make so many varities. Butternut Squash is one of my favorite. Maple syrup provide a sweet note. I hope you enjoy this.

Number Of Ingredients 5

2 medium butternut squash [2 pounds each]
1/2 c maple syrup
4 Tbsp butter, cut in pieces
1/2 tsp salt
1/4 tsp ground black pepper

Steps:

  • 1. Cut each squash lengthwise in half; discard seeds. With vegetable peeler, remove peel, then cut squash crosswise into 1-inch-thick slices.
  • 2. In 5 quart saucepot, heat 1 inch water to boiling over high heat,add squash. Reduce heat, cover and simmer until tender, About 15 minutes. Drain.
  • 3. In large bowl, combine squash,maple syrup butter, salt and pepper. With mixer at low speed, beat until smooth. Spoon into serving bowl.
