Mango-Papaya Bread image

How to make Mango-Papaya Bread

Number Of Ingredients 13

3 eggs
1 1/2 cups sugar
1/4 cup canola oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 cup cubed mango (1/2 inch)
1/2 cup cubed papaya (1/2 inch)
1/2 cup mashed banana
1/2 cup raisins or dates
1/2 cup chopped walnuts
1/2 cup sweetened flaked coconut

Steps:

  • Heat oven to 350°F. Spray 9x5-inch loaf pan with cooking spray; flour pan. Whisk eggs, sugar and oil in large bowl until blended. Combine flour, cinnamon, baking powder and baking soda in medium bowl. Stir in egg mixture until combined. Fold in all remaining ingredients.
  • Pour into pan. Bake 1 hour 5 minutes to 1 hour 15 minutes or until toothpick inserted in center comes out clean and bread just starts to pull away from sides of pan. Cool in pan on wire rack 10 minutes. Remove from pan; cool completely. (Bread may sink slightly as it cools.)
