Mandarin Orange Cake With Pineapple Frosting image

I doubled this and did in large pan for a crowd. However can be done as a one or two layer cake with icing in middle too.

Number Of Ingredients 7

1 box yellow cake mix
half c oil
4 large eggs
11 oz mandarin oranges with juice
8 oz cool whip
8 oz crushed pineapple and juice
1 pkg instant vanilla pudding

Steps:

  • 1. mix cake, eggs, oil, oranges and juice together till smooth
  • 2. can do as one layer or two. Bake till set ...cool
  • 3. Icing... mix pudding with crushed pineapple and juice..fold in cool whip well. Spread on cake and you can garnish with extra mandarin oranges if you wish. Keep refrigerated till slightly before eating.
  • 4. I doubled this recipe and used a large pan since it was for a crowd
