Mameya (Sweet Potato) Pudding image

We added a touch of ground ginger to the usual brown sugar and cinnamon to make this crowd-pleasing sweet potato pudding.

1 lb. mameya sweet potatoes, peeled, boiled and mashed
1/2 cup firmly packed brown sugar
1/4 cup flour
1/4 cup milk
1 Tbsp. butter or margarine, melted
1 egg, lightly beaten
1 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. salt

Steps:

  • Preheat oven to 350°F. Mix all ingredients until well blended.
  • Spoon into greased 1-qt. baking dish.
  • Bake 30 min. or until heated through.
