Mama's Potato Salad image

My mom made this all the time. She never wrote down any recipes but this is my copy of her potato salad.

Number Of Ingredients 9

5 lb russet potatoes, peeled and cubed
4 hard boiled eggs, diced
2 Tbsp onion, chopped
10 green olives, diced
2 Tbsp sweet relish
1 c mayonnaise
4 tsp prepared mustard
1 tsp celery seed
1 tsp salt

Steps:

  • 1. Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.
  • 2. In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.
  • 3. This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
