MALTESE BREAKFAST SCRAMBLE image

Easy and delicious breakfast main dish

Number Of Ingredients 7

2 large ripe tomatoes, seeded and chopped
1/3 cup(s) onion, chopped finely
1 clove(s) garlic, chopped finely
2 tablespoon(s) butter
8 - eggs
- salt and pepper
1 tablespoon(s) italian flat parsley, chopped finely

Steps:

  • Cook onions and garlic in 2 T butter until soft.
  • Add the tomatoes and cook for 5 minutes.
  • Beat the eggs and add salt and pepper.
  • Pour the eggs onto the onion and tomato mixture.
  • Add parsley immediately.
  • Stir continuously over low heat until the eggs are barely set.
  • Serve Immediately
