Number Of Ingredients 10

1/2 lb broad noodles, broken
2 eggs, separated
2 Tbsp vegetable oil
2 Tbsp sugar
1/2 tsp salt
1/2 c chopped raisins
1/2 c chopped apples
1/2 c chopped walnuts
1/4 tsp cinnamon
1/8 tsp nutmeg

Steps:

  • 1. Cook noodles in salted water until tender; drain (not too dry as moist noodle will make the pudding more tender).
  • 2. Beat egg yolks; beat in oil, sugar,and salt. Fold into the noodles.
  • 3. Combine fruits and nuts with spices; mix well;fold into noodles.
  • 4. Beat egg whites stiff but not dry; fold in. Pour into a well-greased 1 1/2 quart casserole. Bake at 350 for 45 minutes or until top is browned.
