Low-Fat Salmon Bisque image

Number Of Ingredients 13

2 cups cooked salmon (or 2 canned salmon)
1 cup tomato juice
1/4 cup diced onion
1/4 cup diced celery
1 teaspoon parsley
2 cups water
1/8 teaspoon baking soda
1/2 tablespoon honey (or sugar)
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
2 tablespoons cornstarch
2 cups skim milk

Steps:

  • Combine first six ingredients (salmon, tomato juice, celery, onion, water and parsley) and simmer fifteen minutes.
  • Add the next six ingredients (baking soda, honey, salt, pepper, butter and cornstarch).
  • Mix well until the butter has completely melted and thin with milk. Using less or more milk for the consistency you like.
