LOW CARB SPINACH CASSEROLE image

Number Of Ingredients 12

2 boxes frozen chopped spinach, 10 oz each
1/4 C chopped onion
1 t oil or butter
1 8-oz package cream cheese
1 C shredded cheese (cheddar or a mixture is nice)
2 eggs
1 t garlic powder
1 t seasoned salt or other spice mixture to taste
1-t T dry white wine (optional)
1 drop Stevia
1 t lemon juice if you don't have the wine
2 T grated Parmesan (not the dried kind in the can)

Steps:

  • 1. Defrost spinach in the boxes or in a 2 quart casserole 2. Preheat oven to 350 degrees 3. Fry onion in the oil or butter until it begins to soften 4. Mix all ingredients except for the Parmesan cheese in the casserole dish. Sprinkle Parmesan on top. 5. Bake for 40-45 minutes or until kniffe inserted in the center comes out clean and cheese on top begins to brown.
