Liver and Onions w/ Gravy image

Two important points to remember when making liver, first, use the most organic, free-range, antibiotic, hormone-free calves liver you can. As full of vitamins and nutrients that liver is, it also collects the bad stuff, so get beef that is as free of chemicals as you can. Second, use calves liver, veal liver, or baby beef liver, not regular beef liver which is just too strong.

Number Of Ingredients 6

8 tablespoon(s) bacon fat
2 large onion, sliced
2 teaspoon(s) white sugar
1 to 1 1/4 pound(s) calves' livers
1/4 cup(s) all-purpose flour
- salt and pepper to taste

Steps:

  • In a medium skillet melt bacon fat over medium heat. Stir in onion and saute until softened. Stir in sugar and continue to cook until onion caramelizes set a side.
  • Rinse liver and remove thin outer membrane and beat liver with a meat mallet until tender Heat bacon dripping in a medium skillet over medium heat
  • Dredge liver slices in flour and salt and pepper to taste and brown in melted bacon drippings for about 1 to 1 1/2 minutes per side.
  • Remove from heat and season to taste with salt and pepper. Serve liver smothered with caramelized onions.
  • Smothered Beef Liver Recipe :- Use the same direction as above when the onions is caramelized set aside in a pan add mix beef gravy and pour gravy over the liver and onions. Add caramelized onions and simmer about 5 mins and serve with hot cooked rice.
