Lisa's Banana Bread image

Found this recipe on Food.com. The name caught my eye as I have a niece named Lisa. We love this recipe. It's easy, moist and fast to make. Not overly sweet. It has no dairy in it.

Number Of Ingredients 8

1 3/4 c all purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 c shortening
2/3 c sugar
2 eggs
2 to 3 medium ripe bananas

Steps:

  • 1. Preheat oven to 350 degrees. Grease 9x5x3-inch loaf pan.
  • 2. Sift flour, baking powder, baking soda, and salt together.
  • 3. With mixer at medium speed, thoroughly mix shortening with sugar, then the eggs until light and fluffy (4 mins).
  • 4. At low speed, beat in flour mixture alternately with bananas until smooth. Turn into pan.
  • 5. Bake for 1 hour. (DO NOT OPEN DOOR WHILE BAKING) Cool in pan for 10 minutes. Remove and finish cooling on a wire rack.
  • 6. Pat's Note: I add 1 teaspoon of vanilla to the batter. Sometimes I use butter flavored shortening. I use 3 banana's. I start checking the bread after 50 minutes.
