Casseroles are always at the top of our minds when we need an easy dinner option. This cheesy broccoli and chicken casserole will be on that mental list. It's an all-in-one dinner - chicken, vegetables, and rice all in one dish. Wild rice adds much more flavor than traditional white rice. It's filled with tender and juicy chicken. On top is a cracker and poppyseed mixture that, once baked, creates a nice crunchy texture. Your family will gobble up this easy dinner.

Steps:
- For the casserole, bake chicken.
- After cooled, chop into small cubes.
- Cook rice to packages directions.
- Mix those two ingredients together along with broccoli, cream of chicken soup, cheese & sour cream. Stir until well combined. Pour this mixture into greased casserole dish.
- For the topping, melt the one stick of butter.
- Put Ritz crackers into a big Ziploc bag & crush.
- Mix above two ingredients along with the poppy seed. Sprinkle all across casserole.
- Bake at 350 degrees for 30-45 minutes.
