this delicious meatless meatloaf is a great its full of flavor and can be eaten with a side of veggies your choice.....i love the sweet honey ketchup toping....

Number Of Ingredients 14

2 cups dried lentils
3 cups water
2 bay leaves
2 cups Mexican blend cheese
1 dash salt
1 dash pepper
1 onion
1 red pepper
fresh cilantro
1 teaspoon cayenne pepper
2 eggs
1 cup breadcrumbs
3 tablespoons ketchup
3 tablespoons honey

Steps:

  • cook lentils low heat with bay leaf until water absorb.
  • mash lentils.
  • dice onions, peppers, and minced cilantro add to mashed lentils.
  • add sal, pepper, cayenne pepper.
  • cool for 15 minutes lentils
  • add bread crumbs and mexican cheese.
  • add eggs.
  • blend in the mashed lentils.
  • mix ketchup and honey
  • pour over meatload.
  • bake for 1 hour and 15 minutes at 375 degrees.
